Now, stuff the brinjals with the finely ground powder. Arrange them on a plate and keep aside. In a pan, add oil. Once hot, add mustard seeds, cumin seeds, curry leaves and finely chopped onion. Add curry leaves, green chilies, ginger and cook for about 1 minute or until fragrant. Add the chopped eggplant and broad beans, along with turmeric and salt. Mix well, cover and until the veggies are tender, about 12~15 minutes, stirring occasionally. Taste and adjust the seasoning by adding more salt, if required. Spice powder for gutti vankaya. In a pan, add 1 teaspoon oil, add peanut, red chilli, coriander and fenugreek seeds. Give it a roast. Add curry leaves and roast until all the ingredients turn fragrant. Do it in low flame to ensure even cooking. Lastly add coconut (Kopra or dessicated) if adding and roast until golden. Heat oil in a medium size pan on medium heat. Add chana dal, urad dal, mustard & cumin seeds and dry red chilies. Cook till the dal is golden and the seeds start to splutter. Add curry leaves and cook for a minute.
